Ingredients:
- 3/4 cup strawberry puree
- 1/4 cup freshly squeezed orange juice
- 3 tablespoons unflavored gelatin
- 2 cups granulated sugar
- 1/2 cup corn syrup
- 1/4 teaspoon salt
- 1 teaspoon orange blossom water
- 1/2 cup powdered sugar for dusting
- 1/4 cup cornstarch for dusting
Instructions:
The orange juice and strawberry puree should be combined in a small bowl
After scattering the gelatin over the fruit mixture, allow it to bloom for ten minutes
Put the corn syrup, salt, and granulated sugar in a saucepan
Stirring constantly, cook over medium heat until the sugar dissolves
After it dissolves, reduce the heat, and simmer the mixture until a candy thermometer registers 240F 115C
After taking the sugar syrup off of the stove, slowly add it to the gelatin mixture that has bloomed while stirring constantly
Beat the mixture on high speed for 10 to 12 minutes, or until it triples in volume, glossy, and thickens, using an electric mixer
Mix for an additional minute after adding the orange blossom water
Line a 9 x 9-inch 23 x 23 cm baking pan with parchment paper and dust it with a cornstarch and powdered sugar mixture
Evenly distribute the marshmallow mixture after pouring it into the pan
Sprinkle additional powdered sugar and cornstarch mixture on top
For optimal results, let the marshmallows sit at room temperature for at least four hours, or even overnight
After the marshmallows are set, cut them into squares or other desired shapes with a sharp knife that has been coated with the powdered sugar mixture
To keep them from sticking, dust each marshmallow with extra of the powdered sugar mixture
