A delicious and healthy low-carb meal featuring tender chicken breast slices, colorful bell peppers, juicy cherry tomatoes, and zucchini noodles (zoodles), seasoned with herbs and Parmesan cheese. This easy skillet recipe is perfect for a quick and satisfying keto dinner.
Ingredients:
- 2 tbsp olive oil
- 1 lb chicken breast, thinly sliced
- 2 cloves garlic, minced
- 1 bell pepper, thinly sliced
- 1 cup cherry tomatoes, halved
- 2 medium zucchinis, spiralized into zoodles
- Salt and pepper to taste
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions:
Put olive oil in a big skillet and heat it over medium-high heat
It will take about 5 to 7 minutes of cooking after adding the chicken breast slices until they are browned and fully cooked
Add the minced garlic and cook for one more minute
Slice the bell pepper and add the cherry tomatoes to the pan
Cook for two to three minutes, until the peppers start to get a little soft
Season the zucchini noodles zoodles with salt, pepper, paprika, and dried oregano
Add them to the pan
Stir the zoodles every once in a while for another two to three minutes, until they are soft but still firm
Cover the skillet with grated Parmesan cheese and top it off with fresh basil leaves
