Ginger Scallion Zucchini Noodle Soup



A healthy and tasty soup made with zucchini noodles and the fragrant tastes of ginger and scallions. This dish is great for vegetarians and people following the paleo diet because it is light, refreshing, and healthy.

Ingredients:

  • 2 medium zucchinis, spiralized into noodles
  • 4 cups vegetable broth
  • 2 tablespoons grated ginger
  • 3 cloves garlic, minced
  • 4 green onions, thinly sliced
  • 1 tablespoon coconut aminos
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions:

Set vegetable broth on medium heat in a large pot

Grate some ginger, mince some garlic, and cut up some green onions to put in the pot

Mix well

Let the flavors soak into the broth for 5 to 7 minutes

After you add the zucchini noodles, cook for another two to three minutes, until they are just tender

Add the sesame oil and coconut aminos and mix well

Add pepper and salt to taste

Enjoy while hot!
