Portabella Pesto Panini



A tasty vegetarian panini with squishy portabella mushrooms, tasty pesto sauce, and melted mozzarella cheese pressed between two pieces of crusty ciabatta bread.

Ingredients:

  • 2 large portabella mushroom caps, sliced
  • 4 slices of ciabatta bread
  • 1/4 cup pesto sauce
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon olive oil

Instructions:

Preheat a panini press or grill pan over medium heat

Brush olive oil on both sides of the mushroom slices

Grill the mushroom slices for 3-4 minutes per side until tender

Spread pesto sauce on one side of each ciabatta slice

Layer grilled mushroom slices on two slices of bread

Sprinkle shredded mozzarella cheese over the mushrooms

Top with the remaining bread slices to form sandwiches

Place the sandwiches in the panini press or grill pan and cook for 4-5 minutes until golden and the cheese is melted

Remove from heat, slice in half, and serve hot
